Delicious Zucchini Bread

  • 2 large eggs (for a richer taste, go to your local farmers market and get duck eggs!)

  • 1 cup grated zucchini

  • 1/2 cup mayonnaise (or substitute for 1/3 cup vegetable oil + 1/2 cup applesauce)

  • 1 teaspoon vanilla extract

  • 1 1/2 cups all purpose flour

  • 1/2 teaspoon ground cinnamon

  • 1 cup granulated sugar

  • 1/4 cup packed light brown sugar

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt


  • Preheat oven to 350*F

  • Butter a 9x5" loaf pan (or spray with cooking spray)

  • In a large bowl, combine the sugar, brown sugar, and stir in the mayonnaise, eggs, and vanilla. Whisk until well combined, then fold in the zucchini

  • Stir in the salt, cinnamon, baking powder, and baking soda, salt.

  • Stir the the flour in little by little so it's manageable and to not over mix

  • Pour batter into the pan and bake for 50 minutes

  • Insert a toothpick into the center of the bread to ensure fully cooked

  • Let bread cool in the pan for 5 minutes before transferring to a serving tray
